INGREDIENTS:

3 medium beets ( peeled, scrubbed and chopped)

1/2 cup chopped yellow onion

1 chopped carrot

1/2 cup raw cashew

1 tbsp onion powder

1 tbsp garlic powder

1/2 tbsp fennel seeds

1 tbsp ginger puree

1 cup water

1/2 cup cooked chicpeas

3 tbsp tomato paste

1/4 cup apple sauce

1 tbsp dried parsley

1 tbsp lemon juice

Salt and pepper to taste

HOW TO PREPARE PINK PRIMAVERA SAUCE PASTE?

INSTRUCTIONS

STEP 1

a. Combine the beets, onion, carrot, and cashews in a large bowl.

b. Add about one inch of water in it and cover, now cook it over medium flame heat until the beets are fork tender, roughly about 20 mins.

STEP 2

a. while the veggies and cashews are getting softened, measure out the onion powder, garlic powder, fennel seeds, and a ginger puree into a tiny bowl and keep it set aside.

c. Now take a blender, add water, chickpeas, tomato paste, apple sauce, parsley, lemon juice, salt and pepper according to taste.

STEP 3

a. When the veggies are fork tender, add the spice mixture to the large bowl and stir them properly.

b. Carefully pour the contents of the large bowl into the blender and blend on high until completely smooth, and keep adding water side by side until the desired consistency is achieved.

c. Taste and add more salt and pepper if needed.

STEP 4

a. Now serve this sauce over your favorite pasta, as a spread or as a dip, whatever the way you like.
